Ingredients

• Seasonal vegetables (carrot, beans, squash, sweet potato)
• 2 tbsp ghee
• 1 tsp cumin seeds
• Fresh ginger (grated)
• 1 tsp coriander powder
• Fresh coconut (grated, optional)
• Rock salt
• Fresh coriander leaves

Preparation Method

1. Chop all vegetables uniformly
2. Heat ghee in pot, add cumin seeds
3. Add grated ginger, sauté briefly
4. Add vegetables and water to cover
5. Add coriander powder and salt
6. Cook until tender (20 min)
7. Garnish with fresh coriander and coconut
